Didier Chopin Brut Rose 750ml
Blend
60% pinot meunier and 40% pinot noir
This brut rose consists of a majority of pinot meunier coming from Parcels with clays and chalks from the Marne Valley.
Fruity and delicate notes are obtained by addition of pinot noir which is vinified as a red wine.
Vinification
This rose is obtained by blending the white wine with some red wine AOC.
The Champagne is the only AOC region where one is allowed to mix white wine and red wine AOC to obtain a rose.
Spontaneous fermentation by natural yeasts.
A light brut dosage to maintain the alance between freshness, fruity and vinosity to emphasize the character of the wine.
Ageing
Ageing on the lies in the cellars of Our House, in constant temperature of 12c for 5 years.
We want to have our Champagnes at their best.
This is why we keep them much longer on the lies, while the minimum legally required time is fifteen months.
Tasting Notes
Colour
Very intense pink colour with salmon tinits. Fine, creamy and persistent foam.
Nose
First nose of red berries, followed by notes of litchi and grapefruit.
Palate
Fresh and elegant attack.
Full and ample mouth, carried by a good acidity which highlights the fruit.
A rich texture dominated by spicy notes,
